"Anyone who likes dates and the flavor of orange will think these moist muffins are a treat," confirms Rosella Peters of Gull Lake, Saskatchewan. "I get compliments each time I serve them."

Ingredients

  • 1-1/4 cups King Arthur Premium 100% Whole Wheat Flour
  • 1 cup King Arthur Unbleached All-Purpose Flour
  • 3/4 cup packed brown sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup orange juice
  • 1/3 cup butter, melted
  • 3/4 cup chopped dates
  • 1/3 cup chopped walnuts
  • 1 teaspoon grated orange peel

Directions

  • In a bowl, combine the dry ingredients. Combine eggs, orange juice
  • and butter; mix well. Stir into dry ingredients just until
  • moistened. Fold in dates, walnuts and orange peel. Coat muffin cups
  • with cooking spray or use paper liners; fill two-thirds full with
  • batter.
  • Bake at 400° for 15-20 minutes or until a toothpick comes out
  • clean. Cool for 5 minutes before removing from pan to a wire rack.
  • Yield: 1 dozen.
