Orange Bundt Cake Recipe

Orange Bundt Cake Recipe

This pretty cake comes together quickly with a boxed mix. Fat-free mayonnaise replaces the heavy oils, and the citrus glaze is always a hit. —Deborah Williams of Peoria, Arizona
TOTAL TIME: Prep: 15 min. Bake: 40 min. + cooling YIELD:14 servings

Ingredients

  • 1 package yellow cake mix (regular size)
  • 1 envelope whipped topping mix (Dream Whip)
  • 3/4 cup orange juice
  • 3/4 cup fat-free mayonnaise
  • 3 eggs
  • 1 tablespoon grated orange peel
  • GLAZE:
  • 1-1/2 cups confectioners' sugar
  • 2 tablespoons orange juice

Directions

  • 1. In a large bowl, combine the first six ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Coat a 10-in. fluted tube pan with cooking spray and dust with flour. Pour batter into pan.
  • 2. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Combine the glaze ingredients; drizzle over cake. Yield: 14 servings.

"I turned this delicious cake upside down and put banana icing on it. I put small colored marshmallows around the top edge. I put 8 creme filled roulee rolled wafers around the top(spaced) and 8 animal crackers at the base of the wafers. I topped the wafers with and 8 inch paper doily cut and taped to fit over the wafers for a roof of the merry-go-round. EVeryone at my granddaughters birthday party raved over the taste of the orange in the cake and the taste of banana in the icing (made with banana dry pudding mix, powdered sugar, and milk and cool whip.)

Mmmm, so good."

With the glaze I also put a tsp or so of orange extract. I also decorated it with candied orange peels I made myself. NExt time I might try a white cake so the orange zest will be seen and try using regular coolwhip for an even light batter. Anyway I give it lots of thumbs up. It was great!!"
