Satisfying SandwichA frittata is a great choice for breakfast. But you can turn it into a hearty lunch or dinner by using the open-faced omelet as a sandwich filling. Simply cook the frittata as the recipe directs, then place a piece between two slices of substantial bakery bread, such as sourdough or focaccia. Include sliced tomato and fresh spinach leaves, if you'd like, for a quick sandwich that's sure to satisfy.

Thank you Edna for sharing a great recipe! I will make it again as is - and make variations on the theme. Debbie - I like danzrule's comment that you should be on the Weight Watcher's site if you're going to be critical. Be aware that MODERATION is the key as well as "variety is the spice of life". Most recipes are ment to be adapted to a person's tastes and dietary requirements. This is neither unhealthy nor poor - nor is it something most of us would eat everyday!

My family really enjoyed this as an easy week night meal. I used frozen onions and green peppers, combined with the roasted red peppers. Just used salt/pepper for the omelet seasoning, with a little milk whisked in, and butter in the skillet. Used Miracle Whip instead of the salad dressing and fresh spinach instead of the arugula. Served with a side of fruit (we had fresh pineapple and mangos this evening). I like finding original hot sandwiches for an easy dinner idea. This allowed me to combine a dinner menu consisting of a hot sandwich concept combined with the 'breakfast for dinner' idea. It turned out great!

Made this this morning because I am off work today - a little too much work for a normal weekday - and it was delicious! Perfect for a weekend morning! And I agree with the majority - this is an excellent base to start from! You can make quite a few substitutions to suit your requirements. No one says you MUST follow the recipe to the letter - that's the joy of cooking! So Debbie and the rest of the food police should be quiet unless they have actually tried a recipe and found it lacking - not because in their opinion it is unhealthy. No is advocating that this be eaten every day either. Like I said this is a weekend treat!

this recipe sounds good, and I am a weight watcher member, Debbie don't rate it, make it healthier then decide. I agree you do sometimes have to eat outside your way of life eating (healthier)

This was excellent. I made a few changes as did many others to lower the calories & fat. I used a little cooked & drained turkey sausage instead of the Canadian bacon (because that is what I had on hand), whole grain bread, brown mustard instead of salad dressing, and butter spray on the bread for the panini grill. I have also made it substituting a low carb wrap for the bread, microwaving the finished wrap, and serving it with home-made salsa on the side.

I loved it....I agree with all those who get annoyed at others' "uppity" comments. I have commented about this very same thing many times, on other recipes I have reviewed, where some stat counter takes issue with the "healthiness" of a given recipe. If you don't deem it worthy of YOUR criteria for making a recipe, please don't comment since you obviously are NOT going to try it. Live it up once in awhile..an occasional indulgence in a recipe that may contain more fat/sodium than YOU would DARE put in your mouth WILL NOT KILL YOU. I assure you. So instead of trashing someone's favorite recipe, who took the time to share it with others, please just keep your comments to yourself. Thank you Edna, for sharing this with us!

Can't wait to try this recipe. You can easily substitute many of the ingredients to cut down on the fat content, sodium etc. It just takes alittle imagination. YUM!

Another great recipe from Taste of Home. I used Turkey Bacon and a mix of Dijon and regular Mustard instead of the salad dressing. To those that feel this is a bad recipe try using 9-Grain bread instead of the croissaint. The whole concept of thisbreakfast sandwich is wonderful and very adaptable.
