  • 1 cup shortening
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 3 eggs
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt

  1. Preheat oven to 375°. In a large bowl, cream shortening, peanut butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, baking soda and salt; add to creamed mixture and mix well.
  2. Roll into 1-1/2-in. balls. Place 3 in. apart on ungreased baking sheets. Flatten with a fork or meat mallet if desired. Bake 10-15 minutes. Remove to wire racks to cool. Yield: 3 dozen.

"If the picture was of the recipe published, then it almost looks like it was made with a pizzelle maker. It is alot like a waffle maker. You have to press down and lock it for a minute and a half and then your cookie is done. Your cookie comes out quite crisp and delicate. The recipe sounds like it would. I will try it just as soon as I unpack my pizzelle maker. I have it in a box somewhere. Most pizzelles are anise, sugar, or almond flavored. This will be a real treat! Maidensolo"

"Delish! I used creamy pb and rolled and wrapped them so I could slice and bake. They worked out great. My husband wanted more chewy but I thought they were good. I may try them again and not roll them, to see if the consistency is any different. I did use Crisco shortening and the dough came together really nice."

"My family is now eating the second batch of these I've made this week, & it's only Wednesday. I took some of them to a few residents of a senior housing facility, & they were requesting more the next day. Easy to make, definitely use 1 1/2 cups of peanut butter, all time favorite!"
