Oatmeal Chocolate Chip Peanut Butter Bars Recipe

Oatmeal, peanut butter and chocolate chips make these bars a big hit with kids of all ages. Since I always have these basic ingredients on hand, I can whip up a batch anytime. —Patricia Staudt, Marble Rock, Iowa
TOTAL TIME: Prep: 15 min. Bake: 20 min. + cooling YIELD:36 servings

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup quick-cooking oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (6 ounces) semisweet chocolate chips
  • ICING:
  • 1/2 cup confectioners' sugar
  • 2 tablespoons creamy peanut butter
  • 2 tablespoons milk

Directions

  • 1. In a large bowl, cream the butter, sugars and peanut butter until light and fluffy. Beat in egg and vanilla. Combine the flour, oats, baking soda and salt; gradually beat into creamed mixture and mix well. Spread into a greased 13-in. x 9-in. baking pan. Sprinkle with chocolate chips.
  • 2. Bake at 350° for 20-25 minutes or until lightly browned. Cool on a wire rack for 10 minutes.
  • 3. Combine icing ingredients; drizzle over the top. Cool completely. Cut into bars. Yield: 3-4 dozen.

"These bar cookies were really good. I had a half package of cinnamon chips in the freezer so I added them mixed in with the chocolate chips to sprinkle on the top. Yum! I also added about a half cup of chocolate chips to the batter. Everyone loved them."

"I've made these twice and plan on making them again. These are really delicious and super easy. I took an extended lunch break so I could bring to work for a an afternoon snack and they were a huge hit! I mixed dark chocolate chips in with the batter and no glaze. Used super chunky peanut butter too. Super good flavor."

"Easy, quick and good! I read the other reviews about them being dry, so I decided to use 6 TBL canola oil. in place of the butter. Used 1/3 c sugars as others have done and like collyflower07 I only had old fashioned oats, so I put them in a food processor and pulsed a few times. Dough was crumbly, so I patted it down evenly with my hands,. I didn't make the icing, but as soon as I took them out of the oven, I swirled/spread the chocolate chips.

"Great taste, oatmeal added nice texture, and the drizzle made this a more special cookie! Put choc chips on top as the recipe says or cookie will be mushy; we ate cookie 20 minutes after out of the oven. Also I cut the chips down to 2/3c., sugars each 1/3c and it was plenty sweet, esp if using skippy or like PB. Natural PB has just salt, no sugar in it. I'll definitely try this recipe again and play around with the type of PB I use."

"The original name of this recipe was "Peanut Butter Bars." It's been a favorite in our family since it was first published in TOH in 2/96. Don't change a thing; it's perfect as written. My two youngest kids got their fellow high school track team members hooked on them for a couple of years, so I had to make two pans of them every week for awhile. Also, a good bar to grab when you don't have time to eat breakfast."

"So yummy! I did cut back a little on the sugars (didn't pack brown sugar, 1/3 C gran. sugar). I used 1/2C whole wheat flour and about 1 1/2 C oats (cut soda in half too). No icing used. "I have used this recipe and it's wonderful! I DID grease and flour my 13x9x2" baking pan and I also used about 1-1/4 cups confectioners' sugar and about 2 to 4 Tbsp. milk and 2 Tbsp. CREAMY peanut butter for the glaze on these bars! I added just enough sugar and milk to achieve the spreading consistency needed for the glaze used on these bars! I made these again 9/5/14! Whenever I've prepared them before, these bars have been a hit each time! Thank you,
