Oatmeal Chip Cookies

- 1/2 cup shortening
- 1 cup sugar
- 1 tablespoon molasses
- 1 Eggland's Best Egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup quick-cooking oats
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup (6 ounces) semisweet chocolate chips
- In a large bowl, cream shortening and sugar until light and fluffy.
- Beat in the molasses, egg and vanilla. Combine the flour, oats,
- baking soda, cinnamon and salt; gradually add to creamed mixture and
- mix well. Stir in chocolate chips.
- Roll into 1-1/2-in. balls. Place 2 in. apart on greased baking
- sheets. Bake at 350° for 8-10 minutes or until golden brown.
- Cool for 5 minutes before removing from pans to wire racks. Yield:
- about 1-1/2 dozen.
