Nutty Buttermilk Oat Pancakes

Ingredients

  • 1 cup quick-cooking oats
  • 1-1/4 cups buttermilk
  • 1/2 cup King Arthur Unbleached All-Purpose Flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 tablespoons plus 1-1/2 teaspoons canola oil
  • 1 egg, lightly beaten
  • 1/3 cup finely chopped pecans

Directions

  • In a large bowl, combine oats and buttermilk; let stand for 5
  • minutes. In a small bowl, combine the flour, sugar, baking powder,
  • salt and baking soda; stir into oat mixture. Add oil and egg. Fold
  • in pecans. Let stand for 10 minutes.
  • Pour batter by 1/4 cupful onto greased hot griddle. Turn when bubbles
  • form on top; cook until the second side is golden brown. Yield: 8
  • pancakes.
