Mom's Sweet Potato Salad Recipe

My mother used to make this potato salad. We all liked it back then— and now my family likes it, too!

Ingredients

  • 3 pounds sweet potatoes, cooked, peeled and cubed
  • 1/2 cup chopped onion
  • 1 cup chopped sweet red pepper
  • 1-1/4 cups mayonnaise
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon hot pepper sauce

1 serving (3/4 cup) equals 292 calories, 19 g fat (3 g saturated fat), 8 mg cholesterol, 436 mg sodium, 29 g carbohydrate, 4 g fiber, 2 g protein.

Directions

  1. In a large bowl, combine the sweet potatoes, onion and red pepper. In a small bowl, blend remaining ingredients; add to potato mixture and toss to coat. Cover and refrigerate. Yield: 10-12 servings.

Here's a tip I learned to prevent boiled potates from getting like mashed. Add several teaspoons of white vinegar to the water..a couple for a small pot to several for a large batch. Works every time to keep the potatoes from mushing up, no matter what kind of potato you're boiling!....and no, the potatoes don't taste like the vinegar:-)

I did a variation of the ingredients that was really tasty too. Substituted blue cheese dressing for half the mayo and added raisins instead of red peppers.

I had the same problem. My sweet potatoes were more like mashed. I think this is the kind of recipe where they would say you should not even mix it too much so that the potatoes won't fall apart. It was tasty but I wouldn't try it again.
