Moist Bran Muffins Recipe
- 1/2 cup All-Bran
- 1/2 cup 2% milk
- 2 tablespoons canola oil
- 1/2 cup King Arthur Unbleached All-Purpose Flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- In a large bowl, combine the bran and milk; let stand for 5 minutes. Stir in oil. Combine the remaining ingredients; stir into bran mixture just until moistened.
- Fill greased or paper-lined muffin cups half full. Bake at 400° for 18-22 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 4 muffins.

I doubled this recipe and made 8 muffins. I added dried cranberries that I had soaked in boiling water to make them tender and chopped pecans. I also put a little turbinado sugar on top. Other than that, I followed the recipe. The muffins were easy to make and turned out very moist and tender. I will definitely make them again.
