Melon with Minted Lime Dip Recipe

For a refreshing summer side dish for any meal, our Test Kitchen recommends these marinated melon balls with a cool, creamy dip. You can also serve this fruity treat as a light dessert.
TOTAL TIME: Prep: 15 min. + marinating YIELD:8 servings

Ingredients

  • 1/4 cup sugar
  • 1/4 cup water
  • 6 tablespoons lime juice
  • 2 tablespoons minced fresh mint
  • 2 teaspoons grated lime peel
  • 2 tablespoons minced fresh gingerroot
  • 8 cups melon balls or cubes
  • MINTED LIME DIP:
  • 1 cup (8 ounces) sour cream
  • 2 tablespoons sugar
  • 1 tablespoon lime juice
  • 2 teaspoons grated lime peel

Directions

  • 1. In a large bowl, combine the sugar, water, lime juice, mint, lime peel and ginger. Add melon balls. Cover and refrigerate for 1-6 hours.
  • 2. Thread melon onto wooden skewers or toothpicks. In a small bowl, combine dip ingredients. Serve with melon. Yield: 8 cups fruit (1 cup dip).
