Favorite Chicken Menu
Whether served as patio fare in the summer or comfort food in winter, we love this chicken dinner!
These versatile dishes can be complemented with new potatoes, rice or couscous and a side dish of carrots, broccoli or the vegetable you prefer.
Our three grown children were raised on my flavorful chicken dish, and the other dishes are also tried-and-true favorites in my kitchen here in Melfort, our hometown since 1975.
My husband, John, and I met in Calgary, Alberta, where I grew up. We lived in Saskatoon for 3 years before moving here. Talk about culture shock! Calgary’s population was 700,000, while Melfort had barely 6,000. But it’s been a great place to raise a family.
I am currently employed part time as a teacher’s aide, working with mentally and physically challenged students at our local high school. It’s a rewarding job that I truly love. I can still find time for reading, gardening, sewing, knitting, folk art painting and, of course, cooking, which I enjoy so much.
Mom Was Mentor
My love of cooking came from my mother, Jean Southam, who always encouraged me to make things on my own. She was a stay-at-home mom with four children, and we were often greeted with the aroma of freshly baked bread after school. I also recall her making pies, cakes, loaves, jams and jellies to enter in the local fair every year.
To me, cooking goes hand in hand with entertaining. John and I enjoy hosting family and friends in our home and at our lake cottage. We both love hockey and are season ticket holders to Melfort’s Junior A team, the Mustangs.
- Early in the day, make the sauce for the chicken and refrigerate it. This saves you time later when you're ready to assemble the dish for the oven.
- Mix up the salad dressing earlier, but add it just before serving so the greens stay crisp. To remove the smell of garlic, rub your fingers over a stainless steel spoon.
