Ingredients

  • 1/2 cup sliced celery
  • 1/2 cup sliced cucumber
  • 1/2 cup sliced carrots
  • 1/2 cup slice radishes
  • 1/2 cup bottled Italian salad dressing
  • 5 cups torn salad greens

Nutritional Facts

Diabetic Exchanges: One serving (prepared with light salad dressing) equals 1 vegetable, 1/2 fat; also, 44 calories, 216 mg sodium, 2 mg cholesterol, 5 gm carbohydrate, 1 gm protein, 3 gm fat.

Directions

  1. In a large bowl, combine the celery, cucumber, carrots, and radishes. Add the dressing and refrigerate for 1 hour. Just before serving, add greens and toss. Yield: 5 servings.
