Let sweet potatoes shine underneath a simple but delectable drizzle of butter, maple syrup, bourbon and seasonings. No added sugar or marshmallows are needed!—Laureen Pittman, Riverside, California
- 5 medium sweet potatoes (about 2-1/2 pounds), peeled and cut into 1-inch pieces
- 2 tablespoons butter
- 1/3 cup maple syrup
- 2 tablespoons bourbon
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Preheat oven to 400°. Place sweet potatoes in a large bowl. In microwave, melt butter; stir in remaining ingredients. Drizzle over potatoes and toss to coat.
- Transfer to a foil-lined 15x10x1-in. baking pan. Roast 40-45 minutes or until tender, stirring occasionally. Yield: 6 servings.
