  • 5 medium sweet potatoes (about 2-1/2 pounds), peeled and cut into 1-inch pieces
  • 2 tablespoons butter
  • 1/3 cup maple syrup
  • 2 tablespoons bourbon
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

3/4 cup: 181 calories, 4g fat (2g saturated fat), 10mg cholesterol, 235mg sodium, 35g carbohydrate (20g sugars, 3g fiber), 2g protein. Diabetic Exchanges: 2 starch, 1 fat.


  1. Preheat oven to 400°. Place sweet potatoes in a large bowl. In microwave, melt butter; stir in remaining ingredients. Drizzle over potatoes and toss to coat.
  2. Transfer to a foil-lined 15x10x1-in. baking pan. Roast 40-45 minutes or until tender, stirring occasionally. Yield: 6 servings.
