Ingredients

  • 1/2 cup ketchup
  • 1/2 cup honey
  • 1/2 cup chopped onion
  • 1/3 cup cider vinegar
  • 1/4 cup apricot nectar
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon salt
  • 1/3 cup canola oil

One serving (2 tablespoons) equals 87 calories, 5 g fat (trace saturated fat), 0 cholesterol, 133 mg sodium, 12 g carbohydrate, trace fiber, trace protein. Diabetic Exchanges: 1 fruit, 1 fat.

Directions

  1. In a blender or food processor, combine the first nine ingredients; cover and process until blended. While processing, add oil in a steady stream. Process until thickened. Store in the refrigerator. Yield: 2 cups.
