Makeover Creamed Corn Recipe
- 4 packages (10 ounces each) frozen corn, thawed
- 1 cup half-and-half cream
- 1/4 cup butter, cubed
- 2 tablespoons sugar
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/3 cup all-purpose flour
- 2 cups fat-free milk
- 1/2 cup shredded sharp cheddar cheese
- 1. In a Dutch oven, combine the first six ingredients. Cook and stir over medium heat for 8-10 minutes or until heated through.
- 2. Combine flour and milk until smooth. Stir into pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted. Yield: 10 servings.
3/4 cup equals 234 calories, 9 g fat (6 g saturated fat), 31 mg cholesterol, 574 mg sodium, 33 g carbohydrate, 3 g fiber, 8 g protein.
