Luscious Lemon Fruit Dip Recipe

Ingredients

  • 2 cups sugar
  • 2/3 cup cornstarch
  • 1 cup cold water
  • 4 eggs, lightly beaten
  • 2/3 cup lemon juice
  • 2 teaspoons vanilla extract
  • 2 cups heavy whipping cream, whipped
  • Assorted fresh fruit

Nutritional Facts

1/4 cup: 152 calories, 5g fat (3g saturated fat), 59mg cholesterol, 19mg sodium, 25g carbohydrate (20g sugars, 0g fiber), 2g protein .

Directions

  1. In a large heavy saucepan, combine the sugar and cornstarch. Gradually whisk in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat.
  2. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in lemon juice and vanilla.
  3. Transfer to a large bowl. Cool to room temperature without stirring. Cover surface of mixture with waxed paper; refrigerate until cooled. Fold in whipped cream. Serve with fresh fruit. Yield: 5 cups.

"it was ok---too many ingredients!! i make a similar dip with just 1)8-oz whipped cream cheese and 1)7-oz jar of marshmallow cream, just whip together, refrigerate an hour. the dip can also be made with many other flavors of your liking or your guests liking--just add to the dip"

"Cant believe i ate the whole thing. I started just dipping my melon, plum, apple and nectarine slices in it, then i went for the strawberries, then i trew in a handfull of blueberries, and then it was all gone. Had a slight stomach ache from eating too much, but it was worth every bite:)"

"I made this dip for a summer cocktail party and it was a hit! It's a great accompaniment for fresh, summer fruit and is a far less guilty pleasure than many other summer indulgences. I even had a few guests take a spoonful or two of the dip and eat it by itself. It refrigerates well and is just as good the second day if you have leftovers or need to make it early. Try this recipe - you won't be disappointed!"
