  • 1-1/2 cups fat-free vanilla yogurt
  • 1 can (8 ounces) unsweetened crushed pineapple, undrained
  • 1 package (1 ounce) sugar-free instant pistachio pudding mix

1/2 cup: 75 calories, trace fat (trace saturated fat), 2mg cholesterol, 280mg sodium, 16g carbohydrate (0g sugars, trace fiber), 3g protein Diabetic Exchanges:1/2 fruit, 1/2 fat-free milk

"I used a large can of pineapple, and 2 cups of yogurt . I added 1/2 cup of mini marshmallows and sprinkled with toasted coconut & sliced almonds before serving which added alittle more fat but it was a big hit."
