Lime Muffins

 Lime Muffins
I bake muffins every Sunday morning, so I'm always trying different ingredients to make them interesting. These citrus muffins are my husband's favorite.

Ingredients

  • 2 cups King Arthur Unbleached All-Purpose Flour
  • 1 cup sugar
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup milk
  • 1/3 cup vegetable oil
  • 3 tablespoons lime juice
  • 1-1/2 teaspoons grated lime peel

Directions

  • In a bowl, combine the first four ingredients. In another bowl, beat
  • the eggs, milk, oil, lime juice and peel. Stir into dry ingredients
  • just until moistened.
  • Fill paper-lined muffin cups two-thirds full. Bake at 400° for
  • 18-20 minutes or until a toothpick comes out clean. Cool for 5
  • minutes before removing from pan to a wire rack. Yield: 1 dozen.
