Light Berry Mousse Recipe
- 3/4 cup boiling water
- 1 package (.3 ounce) sugar-free strawberry gelatin
- 1 cup ice cubes
- 1-1/2 cups sliced fresh strawberries
- 3/4 cup reduced-fat whipped topping
- 1. In a blender, combine water and gelatin. Cover and process until gelatin is dissolved. Blend in ice cubes until partially melted. Add strawberries; process until blended. Pour into a bowl; fold in whipped topping. Chill for 2 hours. Yield: 4 servings.
3/4 cup: 57 calories, 2g fat (0 saturated fat), 57mg cholesterol, 55mg sodium, 8g carbohydrate (0 sugars, 0 fiber), 2g protein. Diabetic Exchanges: 1/2 fruit, 1/2 fat.
