  • 1 tablespoon olive oil
  • 1/2 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 medium zucchini
  • 1/3 cup crumbled goat or feta cheese

Nutritional Facts

3/4 cup: 83 calories, 6g fat (2g saturated fat), 12mg cholesterol, 352mg sodium, 5g carbohydrate (3g sugars, 2g fiber), 3g protein. Diabetic Exchanges: 1 vegetable, 1 fat.


  1. For dressing, in a small bowl, mix the first five ingredients. Using a vegetable peeler, shave zucchini lengthwise into very thin slices; arrange on a serving plate.
  2. To serve, drizzle with dressing and toss lightly to coat. Top with cheese. Yield: 4 servings.
Health Tip: Making this colorful salad with zucchini instead of spaghetti saves 130 calories per serving.
