Lemony Beets Recipe
This is a sure fire way to get people who say they don't like beets to enjoy them.
- 1 tablespoon chopped onion
- 1 teaspoon butter
- 1 can (15 ounces) whole beets, drained and quartered
- 1 tablespoon water
- 1 tablespoon lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- Dash sugar
- 1. In a small saucepan, saute onion in butter. Stir in the remaining ingredients. Cover and cook for 5 minutes or until heated through. Yield: 2 servings.
3/4 cup: 87 calories, 2g fat (1g saturated fat), 5mg cholesterol, 580mg sodium, 17g carbohydrate (12g sugars, 4g fiber), 2g protein.
