Lemon Squares Recipe

I'm expected to bring these bars to bridal showers and family gatherings. The combination of sweet and tart tastes is sure to please. —Mary Larson, Maplewood, Minnesota
TOTAL TIME: Prep: 5 min. Bake: 35 min. YIELD:48 servings

Ingredients

  • 3 cups all-purpose flour
  • 3/4 cup confectioners' sugar
  • 1/2 teaspoon salt
  • 1-1/2 cups cold butter
  • TOPPING:
  • 6 eggs, lightly beaten
  • 3 cups sugar
  • 1/2 cup lemon juice
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Confectioners' sugar

Directions

  • 1. Preheat oven to 350°. In a large bowl, combine the flour, confectioners' sugar and salt. Cut in butter until crumbly. Pat into a greased 15x10x1-in. baking pan. Bake 16-20 minutes or until set and top is golden brown.
  • 2. For topping, combine the eggs, sugar, lemon juice, baking powder and salt in a bowl. Pour over crust (pan will be full). Bake 16-20 minutes or until set and top is golden brown. Cool. Dust with confectioners' sugar. Cut into squares. Yield: 4 dozen.

"Don't know what I did wrong, as I followed the recipe exactly, but the top layer never set. I baked it for the maximum time and it turned golden brown, as stated in the direction, but was runny. I wanted to take them to my daughter, but they were too runny to transport. I ended up throwing them away. So disappointed."
