- 2 cups biscuit/baking mix
- 2 eggs, lightly beaten
- 1/2 cup canola oil
- 1 cup club soda
- 1 tablespoon lemon juice
- 1 teaspoon McCormick® Pure Vanilla Extract
- 2 teaspoons poppy seeds
- In a large bowl, combine the biscuit mix, eggs and oil. In a small bowl, combine the club soda, lemon juice and vanilla; gradually stir into biscuit mixture until smooth. Gently fold in poppy seeds.
- Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Yield: 12 waffles.

"I followed the recipe to the letter and ended up with a batter that was the consistency of skim milk. I added about a cup more biscuit mix which seemed to correct this problem. The first 4 waffles came out looking beautiful, brown and fluffy. However, once I sampled an edge I discovered an essential ingredient is missing...sugar. I added about 2 to 3 tablespoons of sugar, thus creating a nicer brown on the waffles and the ability to enjoy them with nothing more than a dab of butter."
