Key Lime Chicken Thighs Recipe

I've been cooking since I was a girl, and I like trying new recipes. Key lime juice is a refreshing change of pace from the lemon juice used in many baked chicken dishes. —Idella Koen, Metolius, Oregon
TOTAL TIME: Prep: 10 min. Bake: 30 min. YIELD:4 servings


  • 8 bone-in chicken thighs, skin removed (6 ounces each)
  • 3 tablespoons butter
  • 2 to 3 tablespoons Key lime juice or lime juice
  • 12 to 16 drops hot pepper sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon chicken bouillon granules
  • 1/2 teaspoon salt
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon dried rosemary, crushed
  • 1/4 to 1/2 teaspoon pepper
  • 1/4 teaspoon paprika


  • 1. Place chicken in a greased 13-in. x 9-in. baking dish. Dot with butter; sprinkle with lime juice and pepper sauce. Combine remaining ingredients; sprinkle evenly over chicken.
  • 2. Bake, uncovered, at 425° for 30 minutes or until a thermometer reads 180°. Yield: 4 servings.

"You're not necessarily supposed to taste the lime. It sort of "cooks" the surface of the chicken and seals in the juices to keep it moist and tender. Mexican cooks have been using this method for a long time and I learned this from them. After covering the meat with the lime juice, you can add whatever seasoning you like and the end result will be juicy and delicious. This seasoning mix looks really good and I plan to use it next time I fix chicken."

"My oven was otherwise occupied, so I browned the chicken in a skillet, drizzled the sauce over it, covered it, and turned down the heat until it cooked through, about 10 minutes. It was quick, easy, and the chicken was moist and flavorful. I realized during dinner that I'd left out the brown sugar, and it was still delicious. We had sauteed asparagus and red peppers, and cous cous as sides."

"Delicious! The seasoning is very good and the spices blend very nicely with the lime juice! I made the mistake of leaving the skin on so unfortunately the flavors did not absorb into the chicken as much :( I also opted to coat the thighs in EVOO instead of butter...trying to make it a little healthier and it allowed my daughter to eat it (she has dairy allergies)."

"I made this recipe tonight and after the chicken was done I cut it up and use it in wraps with black beans, corn, crushed torilla chips, diced tomatoes, onions, green bell peppers and shredded mexican cheese blend and topped it off the Seven Sea's Kraft dressing.
