Ingredients

  • 2 bunches kale, trimmed and torn
  • 8 bacon strips, diced
  • 2 large onions, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  1. In a large saucepan, bring 1 in. of water to a boil. Add kale; cook for 10-15 minutes or until tender. Meanwhile, in a large nonstick skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 teaspoon drippings. In the drippings, saute onions and garlic until onion is tender.
  2. Drain the kale; stir into onion mixture. Add the salt, pepper and reserved bacon; heat through. Yield: 6 servings.

"Who isn't going to like anything with bacon? This was a home-run with everyone in my family. I used 1/2 of an onion as that was all I had. I also cooked the kale in beef broth. Used probably too much of the bacon grease, will back off a little next time. Great flavor. Will definitely make this again."

"Great recipe! The bacon even tempted two male veggie haters to eat kale. I used two small bunches of kale and six strips of bacon (which was more than enough bacon). I also used olive oil to cook the onions and garlic, since I don't use bacon drippings."
