- 2 cups all-purpose flour
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons butter
- 2 eggs, divided use
- 3/4 cup buttermilk
- 1/3 cup raisins
- Preheat oven to 375°. In a large bowl, combine flour, brown sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. In a small bowl, whisk 1 egg and buttermilk. Stir into flour mixture just until moistened. Fold in raisins. Turn onto a lightly floured surface; knead gently 6-8 times. Shape into a round loaf.
- Transfer to a greased baking sheet. Using a sharp knife, cut a shallow "X" on the top of loaf. Beat remaining egg; brush over loaf. Bake 30-35 minutes or until golden brown.
- Remove from pan to a wire rack; serve warm. Yield: 6-8 servings.

"It was great but I did some changes. I used 3 tablespoons of brown sugar, 4 tablespoons of butter. I mixed 1 tablespoon of orange zest in the buttermilk/egg mixture. I used 1 cup of currants hydrated first with boiling water over them for 5 minutes than drained. I baked for 30 minutes then put foil over the top the last 5 minutes of baking.
