IT'S FUN to make miniature meat loaves instead of one big loaf...and they cook up quickly in a skillet rather than in the oven.
The unique combination of flavors gives the ground beef zip. This recipe is one of my old standbys for a speedy supper.

"My husband, Wayne, asks for this meat loaf all the time," reports Edna Lauderdale of Milwaukee, Wisconsin. "We like it spicy, so we use hot sausage rather than mild. Slices are terrific drizzled with ketchup, served with mashed potatoes and gravy, or in meat loaf sandwiches the next day."
"My daughter likes the cheese stuffed into this flavorful meat loaf made with a blend of ground beef and Italian sausage," writes Laura Lawrence from Salinas, California. "Served with a salad and sourdough bread, the meal is special enough for company."
When I make meat loaf, I usually just mix together whatever I have on hand. One time I added leftover kidney beans I had in the fridge, and my family loved the meat loaf's soft texture. Now it's our favorite.

Craving meat loaf but not wanting to turn on a hot oven forced Jennifer Sheller to come up with this yummy recipe. “It’s a huge time-saver and the scrumptious sauce drizzled over the top keeps the patties wonderfully moist,“ she reports from Lebanon, Pennsylvania.
I hate the thought of making too much and having leftovers for a week, so I've pared down my recipes. This one is simple and quick to prepare, plus the carrot, green pepper and celery make it nutritious and colorful. It's great served with cheddar-topped baked potatoes.—Judi Brinegar, Liberty, North Carolina
