The inspiration for these muffins came from a favorite coffee cake. I wanted to put it in a form our four girls could munch while playing. For variety, I'll sometimes substitute prepared blueberry or lemon pie filling for the delectable from-scratch apple filling.

I was looking for something warm to make for my daughter before school on a rainy morning. So I jazzed up a boxed muffin mix with a chopped apple, walnuts, brown sugar and a fast-to-fix vanilla glaze. The tasty results really hit the spot.

Rhonda Urich was thrilled when we lightened up her Morning Glory Muffins. “In fact, I made a double batch because they freeze so well,” she writes from Loveland, Colorado. “My family can’t wait to have them again, and I’m adding this makeover recipe to my list of favorites.”
This recipe makes a light tasty muffin that stays moist. They're flavorful whether served plain, with butter and jam or dipped in cinnamon-sugar right out of the oven.

I got this recipe from a good friend. The muffins can be eaten anytime, of course, but they are especially popular for coffee breaks and brunches. One thing you can count on...they're really nice and moist!
