How to Make Chicken Tortilla Soup


My weeknights are definitely more relaxing when I make the time to plan ahead and prepare main dishes in advance. Plus, I seem to eat better quality food than when I just wing dinner. Keeping that in mind, I prepared a casserole for a friend as well as one for us, plus Chicken Tortilla Soup to eat during the following week.

My husband and I snapped a few photos while I made the Chicken Tortilla Soup to show you the recipe.

I was already cooking chicken breasts in a skillet for the casseroles, so I decided to cook the chicken for the soup in the skillet, as well.


Once the onion and garlic were tender, it was time for my favorite part about making soup—dumping in the rest of the ingredients!


I added some homemade turkey stock that I had prepared from Thanksgiving in place of the chicken broth. Then I pretty much followed the Chicken Tortilla Soup recipe and tossed in a can of crushed tomatoes, kidney beans, tomato sauce, tomato paste and green chilies.


When I added the tomato paste, I removed both ends of the can and pushed the paste through the tube from one end to the other. It's a great little trick, because I get all of the paste out of the can. I also had a small package of frozen corn on hand and threw that in for some additional color.


I added a little more chili powder, cumin, oregano, sugar, pepper and salt than the recipe called for to boost the flavor since I used homemade broth.


We like it spicy, so I also stirred in crushed red pepper flakes for a little zip.


When I made the tortilla strips, I used wheat tortillas. The baked crisps were really delicious, and they had sort of a nutty taste.


Along with the strips, we garnished with what my husband calls "the goods." The "goods," in this case, refer to a little avocado, reduced-fat sour cream, cilantro and Mexican cheese.


The soup reheated well and was terrific comfort food. Whether you like it spicy or mild, garnished with the goods or just with tortilla strips, this Chicken Tortilla Soup can easily be adjusted to suite your family's tastes.
