Red, White & Blueberry Poke Cake
A sweet treat in the summer, this patriotic poke cake with dazzling red and blue stripes is a fun one to make with the kids.

Use a skewer to poke holes in the top of each cake layer. Pour cooled strawberry gelatin mixture (click here for recipe) over one cake layer to create a colorful effect.
Pour cooled blueberry gelatin mixture (click here for recipe) over remaining cake layer. Cover cakes with plastic wrap; refrigerate until gelatin is set, about 2 hours.
Lightly coat a microwave-safe bowl and the inside of a 2-inch metal star-shaped cookie cutter with cooking spray. Put cutter on a silicone mat or baking sheet lined with foil and coated with cooking spray. Place 2 unwrapped hard candies (such as Jolly Ranchers) in the bowl and microwave for 10 seconds at a time until candies are just melted*; pour into cookie cutter.
*Bottom of bowl will be hot. Hold bowl by rim only or use a hot pad when pouring.
When candy is slightly set, carefully lift cutter, while pushing on edges with the flat end of a wooden skewer. Insert pointed end of a skewer into candy. Cool completely. Insert skewers inside straws before decorating cake. Makes 1 star.
