- Use it or lose it. Opened bacon will last for about a week in the refrigerator. To keep it from going bad, freeze for up to 1 month.
- When freezing bacon, roll up each uncooked strip into a pinwheel and put all the rolls in a plastic freezer bag. Remove any air, seal and freeze. When you need a slice or two, remove them from the bag and thaw at 10-second intervals in the microwave until you can unroll them.
- If you're cooking more bacon than your pan will hold, fold each piece in half and cook until slightly brown. Flip the folded strip. By the time the bottom side is cooked, they've shrunk enough to unfold and still fit in the pan.
