Honey Raisin Muffins
The sweetness of honey brings out the flavor of the raisins in these muffins. My family can't get enough of them, so I make them often for everyone to enjoy.

- 1-1/4 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 2 cups raisin bran
- 1 cup milk
- 1/4 cup honey
- 1 Eggland's Best Egg, lightly beaten
- 3 tablespoons canola oil
- Combine flour, baking powder and salt; set aside. In a large bowl,
- combine cereal, milk and honey; let stand until softened, about 2
- Stir in egg and oil; mix well. Add dry ingredients; stir just until
- Fill greased or paper-lined muffin cups two-thirds full. Bake at
- 400° for 18-20 minutes or until muffins test done. Cool in pan
- 10 minutes before removing to a wire rack. Yield: about 10 muffins.
