This delightful pudding is always a treat and easy to whip up using common pantry ingredients. I usually top the pudding with M&M's. My husband likes whipped topping on his and our daughter loves to dip fresh strawberries in hers.—Carrina Cooper, McAlpin, Florida

Ingredients

  • 1 cup sugar
  • 1/2 cup baking cocoa
  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 4 cups milk
  • 2 tablespoons butter
  • 2 teaspoons vanilla extract
  • M&M's, optional

Nutritional Facts

One 1/2 cup serving (prepared with skim milk and margarine and served without M&M's) equals 196 calories, 4 g fat (0 saturated fat), 2 mg cholesterol, 244 mg sodium, 38 g carbohydrate, 0 fiber, 5 g protein. Diabetic Exchanges: 2 starch, 1 fat, 1/2 milk.

Directions

  1. In a heavy saucepan, combine sugar, cocoa, cornstarch and salt. gradually add milk. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from the heat; stir in butter and vanilla. Spoon into individual serving dishes. Chill until serving. Sprinkle with M&M's if desired. Yield: 6-8 servings.

"Ok I'm trying REALLY hard to let these cool...just not fast enough. I did however, lick the spoon and sample what was left in the saucepan! YUMMMMMMMMMM! Some days ya just gotta have some chocolate puddin'! Also, I cut the recipe in half and it turned out fine as well. Love that this doesn't have eggs in it, not that I'm an egg hater just...it's that whole tempering thing!"

"This pudding is perfect creamy chocolate good,ess in a bowl. A few hints: (1) Do not cook this on high heat, medium low to medium at the highest. (2) You must stir this while it's cooking. I stand at the stove and whisk the entire time. Its like 13-15 minutes, tops. Yup, it seems like forever, no it isn't. (3) This must be allowed to boil in order for it to set up. Keep it at boil for a full two minutes, stiring constantly. If you follow my tips you will always be rewarded with perfect pudding: no chunks in it, no burnt pan, and it will set up every time, promise!"
