To save time when entertaining on New Year's Eve, assemble New Year's Eve Potatoes in the morning and put into greased muffin cups; cover and chill. Remove from the refrigerator 30 minutes before baking as directed.

After the stroke of midnight, wind down the festivities with assorted appetizers and desserts!

Tips for Lobster Tails

Lobster tails are a rich and filling entree, especially when served alongside steak. In Baked Lobster Tails, our home economists cut three lobster tails in half to feed six people.

  1. With a scissors, cut lengthwise through the shell on the underside of the lobster to expose the meat.
  2. Cut the tail in half lengthwise with a sharp knife.

  3. Place lobster tail halves cut side up on a cutting board. Using scissors, cut along the edge of shell to loosen the cartilage from the shell; remove and discard cartilage.
