Ingredients

  • 1 cup textured vegetable protein
  • 1 cup low sodium vegetable broth
  • 1/2 cup cooked long grain brown rice
  • 1/2 cup chopped green onion
  • 1 cup chopped napa cabbage
  • 1/2 cup sliced carrots
  • 1/2 cup chopped celery
  • 2 teaspoons minced fresh gingerroot
  • 2 garlic cloves, minced
  • 1 tablespoon hoisin sauce
  • 2 teaspoons light soy sauce
  • 1/3 cup unseasoned bread crumbs
  • 1/4 cup white all purpose flour
  • Pinch salt
  • Pinch black pepper
  • 1 egg

Directions

  • Preheat oven to 350°F.
  • In large bowl, soak vegetable protein in broth 5 to 10 minutes or
  • until broth is absorbed.
  • Add rice, green onions, cabbage, carrots, celery, ginger root,
  • garlic, hoisin sauce, soy sauce, breadcrumbs, flour, salt, pepper,
  • and egg. Mix well.
  • Spoon mixture into a 7-1/2-inch x 3-3/4-inch loaf pan. Bake 1 hour or
