  • 1 pound ground beef
  • 1 large onion, chopped
  • 1 garlic clove, minced
  • 1 cup chopped carrots
  • 1 cup cubed peeled potatoes
  • 1 cup water
  • 1/2 cup uncooked long grain rice
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

  1. In a large skillet, cook the beef, onion and garlic over medium heat until the meat is no longer pink; drain. Stir in the carrots, potatoes, water and rice.
  2. Cover and simmer for 30 minutes or until the rice and vegetables are tender. Just before serving, stir in the soy sauce, salt and pepper. Yield: 4 servings.
Long grain rice has a length 4 to 5 times that of its width. When cooked, it produces light dry grains that separate easily.

"I doubled the garlic, soy sauce, and rice. I used converted rice because I wanted the grains to remain separated and cut down on the starchiness. I added celery and crushed red pepper flakes, substituting seasoned salt for regular salt. The result is like a better version of Hamburger Helper."

"YUMMY! I used ground turkey. Also, I substituted celery for 1/2 of the onion and used chicken stock instead of water. I tried instant brown rice and it worked well, I just had to shorten the cooking time."

"My family really likes this recipe. I added a half packet of onion soup mix when I was browning the hamburger (and not quite as much chopped onion) and added some thawed frozen peas. A good stick-to-your ribs meal."
