Hearty Baked Beef Stew Recipe

Hearty Baked Beef Stew Recipe

"This is such an easy way to make a wonderful beef stew," beams Doris Sleeth of Naples, Florida. "You don't need to brown the meat first—just combine it with hearty chunks of carrots, potatoes and celery...and let it all cook together in a flavorful gravy. My daughter Karen came up with the recipe for her busy family."
TOTAL TIME: Prep: 15 min. Bake: 1-3/4 hours YIELD:6-8 servings

Ingredients

  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 cup water
  • 3 tablespoons quick-cooking tapioca
  • 2 teaspoons sugar
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 4 medium carrots, cut into 1-inch chunks
  • 3 medium potatoes, peeled and quartered
  • 2 celery ribs, cut into 3/4-inch chunks
  • 1 medium onion, cut into chunks
  • 1 slice bread, cubed

Directions

  • 1. In a large bowl, combine the tomatoes, water, tapioca, sugar, salt and pepper. Stir in the remaining ingredients.
  • 2. Pour into a greased 13-in. x 9-in. or 3-qt. baking dish. Cover and bake at 375° for 1-3/4 to 2 hours or until meat and vegetables are tender. Serve in bowls. Yield: 6-8 servings.

"This is an easy way to make stew--I don't even bother to peel the potatoes and they come out just fine. The meat is tender, the veggies all cooked just right. My husband and I both love it. I do cut down on the salt a bit and it still tastes great."

"This recipe is awesome for busy parents. Quick, easy, and delicious! Love the big chunks, but if you don't want it that way, it is very easy to cut everything smaller after it bakes. We plan to make this often in our house!"

"Thank you for this recipe. It was very good. Because I had 16 oz. of mixed vegetables, I used them instead of the carrots and I diced the meat and potatoes, so everything would cook uniformly. Unfortunately, I forgot the onion, but this was still very good. Thank you again. I hope to see more recipes from you!

*Just out of curiosity, what purpose is the bread? I can understand the minute tapioca, just not the bread."

"Fantastic beef stew recipe. It was so easy I was worried about there not being enough flavor. I was very wrong! I followed the recipe except I used Hunt's basil, garlic, and oregano tomatoes and seared the beef first. What a wonderfully tasty and simple dish!"
