Ham Stuffed Pretzel-Crusted Chicken Recipe

Buttery pretzels, mustard and deli ham "fancy up" this scrumptious chicken recipe. The combination's a hit with my fussy family! —Marie McCarthy, Cobleskill, New York
TOTAL TIME: Prep: 10 min. Bake: 40 min. YIELD:4 servings

Ingredients

  • 4 boneless skinless chicken breast halves (6 ounces each)
  • 1/4 cup honey mustard
  • 8 thin slices deli ham
  • 1 tablespoon butter, melted
  • 1/2 cup crushed pretzels

Directions

  • 1. Preheat oven to 350°. Cut a horizontal slit in one side of each chicken breast half to within 1/2 in. of the opposite side. Spread honey mustard inside each pocket; stuff with two ham slices.
  • 2. Place in a greased 13x9-in. baking dish. Brush with butter; sprinkle with pretzels. Bake, uncovered, 40-45 minutes or until a thermometer inserted in chicken reads 165°. Yield: 4 servings.

"This was a great recipe. I made this for my husband and I and only had chicken tenderloins on hand. so instead of stuffing the chicken I just cooked the chicken in cubes in a skillet then added the honey mustard, ham, and crushed pretzels and served it over a plate of spinach. It was fast and incredibly delicious."

"This was very simple, but added some great taste and texture, without a whole lot of extra fat or calories. I was low on pretzels (I was making this recipe to use up the last bit of broken up pretzels that no body wanted to eat) so I added some crushed chex cereal to it. I didn't put the melted butter on the chicken, but actually spread the chicken with honey mustard and then put the pretzels on them, and then sprayed them with butter spray before putting them in the oven. Something else that would be good with these is a slice of swiss cheese along with the ham. Great tender flavorful chicken."
