Ham Loaf with Pineapple Recipe
This loaf is nice enough for the holidays, but we have it often for everyday meals, too, since it's so easy to prepare and easy on the pocketbook.—Linda Manley, Morgantown, West Virginia
- 2 eggs
- 1 cup milk
- 1 cup crushed saltines (about 30 crackers)
- 1/2 teaspoon salt
- 1/8 teaspoon pepper

- 1/4 cup packed brown sugar
- 2 tablespoons cider vinegar
- 1 teaspoon ground mustard

- 3. Cover and bake at 325° for 1-1/2 hours. Uncover; bake 30 minutes longer or until a meat thermometer reads 160°. Let stand for 15 minutes. Invert onto a serving platter. Yield: 8 servings.
