Ham and Bean Soup Recipe
- 2 medium carrots, sliced
- 2 celery ribs, chopped
- 1/2 cup chopped onion
- 2 tablespoons butter
- 4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
- 4 cups chicken broth
- 2 cups cubed fully cooked ham
- 1 teaspoon chili powder
- 1/2 teaspoon minced garlic
- 1/4 teaspoon pepper
- 1 bay leaf
- In a large saucepan, saute the carrots, celery and onion in butter until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cook for 15 minutes or until heated through. Discard bay leaf. Yield: 7 servings.

This is delicious! I used 3 carrots and 3 celery ribs, a pound and a half of cubed ham, 3/4 teaspoon each of chili powder and minced garlic, 2 bay leaves, 1/2 teaspoon each of paprika and cumin, and 1/4 teaspoon ground ginger. Thanks to all of you who made suggestions to step up the flavor. Fabulous!!!
Love this soup as is!!! I was skeptical about the chili powder, but it gave this bean soup a refreshingly different flavor from other bean soup recipes I've tried. I usually make various versions with potatoes, but this is my new favorite recipe. I love how quick and easy it was too.
This recipe was perfect, and exactly what I was looking for. I only used 1/2 teaspoon of chili powder, just due to personal preference. This will be my go-to recipe for bean soup from now on!
