 Grilled Flank Steak with Chimichurri

Ingredients

  • 3/4 cup chopped green onion
  • 1/3 cup chopped parsley
  • 1/4 g fresh mint
  • 3 tablespoons rice vinegar
  • 2 tablespoons minced fresh gingerroot
  • 2 tablespoons olive oil
  • 1 tablespoon cold water
  • 1/2 teaspoons salt
  • 1/2 teaspoons black pepper
  • 2 garlic cloves, peeled
  • 1-1/2 lb flank steak, trimmed
  • 1/2 teaspoons salt, optional
  • 1/2 teaspoons black pepper
  • Cooking spray

Directions

  • Preheat grill to medium-high.
  • In food processor or blender, puree onions, parsley, mint, vinegar,
  • ginger, olive oil, water, salt, pepper, and garlic until creamy. Set
  • aside.
  • Lightly coat grill rack with cooking spray. Season steak with salt,
  • if desired, and pepper.

  • Place steak on grill rack. Cook 7 minutes per side for medium rare.
  • Remove steak from grill, allow to rest 5 minutes.
  • Cut steak diagonally, against the 'grain,' into thin pieces.
  • Spoon sauce over steak or serve on side.
