Green Beans with Bacon Recipe

"MY MOTHER was from North Carolina, and she preferred green pole beans to green snap beans. I've found that either is delicious in this recipe, as long as long as the beans are fresh. Mother also brought with her from North Carolina the custom of chopping and 'mounding' the beans before serving—a touch that makes them even more special."
TOTAL TIME: Prep/Total Time: 30 min. YIELD:8 servings

Ingredients

  • 1-1/2 pound green beans, cut into 1-inch pieces
  • 6 Jones Dairy Farm Dry-Aged Bacon strips
  • Pepper and seasoned salt to taste

Directions

  • 1. In a covered saucepan, cook beans in a small amount of water for 20-25 minutes or until tender. Drain. Meanwhile, in a skillet, cook bacon until crisp. Remove bacon, reserving drippings. Crumble bacon and set aside. Add beans to drippings; sprinkle with pepper and seasoned salt. Heat through. Add crumbled bacon and toss. Yield: 8 servings.

"Yum, yum, and yum. Green beans and bacon go together like peanut butter and jelly. I did add some diced sweet onion which I cooked in the bacon drippings before adding the cooked beans. Delicious!"

"This is an excellent recipe. I served it for Christmas dinner and everyone loved it. Next time, I may add some onion and mushrooms but it is delicious as is. I did drain off some of the grease as another reviewer suggested."

"Loved this recipe! It was exactly what I was looking for. I used canned green beans and cut up the bacon before browning. I cooked the bacon and threw the beans in. The only thing I would do differently next time is to drain off most of the grease. I didn't think it was necessary and would be much healthier."
