Ingredients

  • 3/4 pound fresh green beans, trimmed
  • 1 medium red onion, halved and thinly sliced
  • 1/3 cup chopped sweet orange pepper
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon Greek seasoning
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  • Place beans in a steamer basket; place in a large saucepan over 1 in.
  • of water. Bring to a boil; cover and steam for 8-10 minutes or until
  • crisp-tender.
  • Meanwhile, in a large skillet, saute onion and orange pepper in oil
  • until crisp-tender. Stir in garlic and seasonings; cook 1 minute
  • longer. Add green beans; toss to coat. Yield: 4 servings.
