Ingredients

  • 4 large red grapefruit
  • 4 cups (32 ounces) reduced-fat plain yogurt
  • 2 teaspoons grated lime peel
  • 2 tablespoons lime juice
  • 3 tablespoons honey
  • Torn fresh mint leaves

Nutritional Facts

1 parfait: 207 calories, 3g fat (2g saturated fat), 10mg cholesterol, 115mg sodium, 39g carbohydrate (36g sugars, 3g fiber), 10g protein.

Directions

  1. Cut a thin slice from the top and bottom of each grapefruit; stand fruit upright on a cutting board. With a knife, cut off peel and outer membrane from grapefruit. Cut along the membrane of each segment to remove fruit.
  2. In a large bowl, mix yogurt, lime peel and juice. Layer half of the grapefruit and half of the yogurt mixture into six parfait glasses. Repeat layers. Drizzle with honey; top with mint. Yield: 6 servings.
