Ingredients

  • 3-1/2 cups quick-cooking oats
  • 1 cup chopped almonds
  • 1 large egg, lightly beaten
  • 2/3 cup butter, melted
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup sunflower kernels
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup chopped dried apples
  • 1/2 cup dried cranberries
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon

Directions

Preheat oven to 350°. Combine oats and almonds in a 15x10x1-in. baking pan coated with cooking spray. Bake 15 minutes or until lightly toasted, stirring occasionally.
In a large bowl, combine egg, butter, honey and vanilla. Stir in sunflower kernels, coconut, apples, cranberries, brown sugar and cinnamon. Stir in oat mixture.
Firmly press into a 15x10x1-in. baking pan coated with cooking spray. Bake 13-18 minutes or until set and edges are lightly browned. Cool on a wire rack. Cut into bars. Store in an airtight container. Yield: 3 dozen.

Test Kitchen Tips
  • For an easy and healthy egg substitute, mix 1 tablespoon ground flax seeds with 2-1/2 tablespoons water. Let stand for 5 minutes before adding with butter, honey and vanilla.
  • Any dried fruit or nuts will work in this recipe. Customize to your heart's desire!

    "These totally fell apart. The only substitution I made was to use raisins instead of apples... And I let them cool completely before cutting. I got about 6 bars, a couple inch sized pieces, and lots of crumble... it does taste good and I'll use it on yogurt I guess, but not making it again!"

    "I'm the one who wrote about stirring? I didn't read it right the first time! But, today I made a pan and they came out beautifully! Cut into sharp edged bars without crumbling and I waited (too long!) for them to cool before cutting. Very good! I had 3 bars before stopping! I will definitely make these again? soon! I will also be trying other additives, so many options out there. Thank you for all the great recipes!"

    "Haven't tried the recipe yet, but wanted to clarify on the comments about "stirring and baking". ONLY the oats and almonds are to be baked at stirred, according to Step 1 in the recipe. Step 3 is to press all the mixed ingredients into the pan to bake the bars. Hope that helped!"

    "As a rule, I do not like any Granola or Health bars. But these are delicious. I sometimes substitute raisins for the dried apples. 130 calories per bar is great, now if I could only learn to stop eating at 1 bar. easy to make, fun to make and delicious to eat. Try them you'll like them!"

    "I just copied this to print and I think I see why so many have had crumble problems. the first paragraph says "stirring occasionally" ? the last paragraph says "press firmly into pan." If they are stirred during baking they will not be bars. I can't wait to get the ingredients and taste these!"

    "My son love these. I could not find dried

    apples so I used raisins. I used chopped
    walnuts instead of almonds. I have made these twice and found if you do not let them cool completely they will crumble when cutting them. Also after I cut them
    I put them in the freezer. When I take a
    granola bar out of the frezer I warm it in the
    microwave for 15 seconds and it tastes so
    good."
