Ingredients

  • 3 envelopes unflavored gelatin
  • 1-1/4 cups water, divided
  • 1-1/2 cups sugar
  • 1/4 to 1/2 teaspoon peppermint extract
  • Green and red food coloring
  • Additional sugar

Directions

  1. In a small bowl, sprinkle gelatin over 1/2 cup water; let stand 5 minutes. In a small saucepan, bring sugar and remaining 3/4 cup water to a boil over medium heat, stirring constantly. Add gelatin mixture; heat and stir over low heat until gelatin is completely dissolved, about 5 minutes. Remove from heat; stir in extract.
  2. Divide mixture between two small bowls. To one bowl, stir in four drops green food coloring; to second bowl, stir in four drops red coloring. Pour each into a greased 8x4-in. loaf pan. Refrigerate, covered, 3 hours or until firm.
  3. Loosen sides from pan with a knife; turn onto a sugared cutting board. Cut into 1/2-in cubes; roll in additional sugar.
  4. Let stand, uncovered, at room temperature 3-4 hours or until all sides are dry, turning every hour. Store in an airtight container in the refrigerator. Yield: about 1 pound (64 pieces).
