Golden Apple Snack Cake Recipe
- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 2-1/2 cups chopped peeled tart apples
- 1/2 cup chopped pecans
- 1. In a large bowl, cream butter and sugar until light and fluffy. Add egg. Combine the flour, baking soda and cinnamon; gradually beat into the creamed mixture. Fold in apples and pecans.
- 2. Transfer to a greased 9-in.-square baking pan. Bake at 350° for 32-38 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Yield: 9 servings.

"I have been making an identical cake to this one for many years... let me make it even simpler! There is no need to cream butter and sugar together, this is not a light airy cake . Put all the ingredients, except apples and nuts, into a food processor and pulse until you have fine breadcrumbs, like making a crumble. Then mix in apples, nuts (I prefer sultanas) and beaten egg until combined. Done!I too was sceptical about this cake, as a pro baker it goes against the principles of cake making, but it is simple and delicious.I use more cinnamon as I find the taste disappears during cooking. I also have made the same cake using pears and chopped stem ginger... yummy.If you want to take it a step further pulse together 1/4 cup butter (1 stick/4 ounces), 1/4 cup Demerara sugar, 1/2 cup all purpose (plain) flour, a good pinch of salt and one teaspoon of cinnamon until it resembles slightly chunky breadcrumbs. Sprinkly over the top for a delicious crumble topped cake. Don't over pulse as it will become cookie dough!What a versatile little recipe... :o)"
"Before writing this review, I emailed everyone I know this recipe! It is surprisingly wonderful. Made according to directions and was a bit skeptical before placing in oven. Much more like a thick dough than cake batter but it baked to a perfect tender texture. Unlike many apple cake recipes, this one the apple truely shines thru in the taste. I agree with others that the cut pieces look a little rustic but the flavor makes up for it. Baked exactly 32 minutes. Perfect."
