I first tried these spice-laced hotcakes at my niece's house and they quickly became my favorite breakfast item. Spreading cream cheese on each one and then topping the pancakes with the thick lemony sauce yields a tasty treat that's different from typical breakfast fare.

Ingredients

  • 1 cup sugar
  • 1/2 cup butter, cubed
  • 1/4 cup water
  • 3 tablespoons lemon juice
  • 1 teaspoon grated lemon peel
  • 1 Eggland's Best Egg, lightly beaten
  • BATTER:
  • 2 cups biscuit/baking mix
  • 1 Eggland's Best Egg
  • 1-1/3 cups 2% milk
  • 1/4 cup light molasses
  • 1-1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 carton (4 ounces) spreadable cream cheese

Directions

  • For lemon sauce, in a small saucepan, combine the first five
  • ingredients. Bring to a boil over medium heat, stirring constantly.
  • Remove from the heat. Whisk a small amount of hot mixture into egg.
