Ingredients

  • 1 quart fresh strawberries, hulled
  • 1/2 gallon vanilla ice cream, softened
  • 1 can (12 ounces) frozen lemonade concentrate, thawed
  • 2 teaspoons grated lemon peel

Nutritional Facts

1 piece: 194 calories, 8g fat (5g saturated fat), 31mg cholesterol, 58mg sodium, 30g carbohydrate (24g sugars, 1g fiber), 3g protein.

Directions

  1. Place strawberries in a food processor; cover and process until pureed. Transfer to a large bowl; add the ice cream, lemonade concentrate and lemon peel. Beat until blended.
  2. Pour into an ungreased 13x9-in. dish. Cover and freeze overnight. Remove from the freezer 15 minutes before serving. Yield: 12 servings.

"My 9-year-old granddaughter and I made this for company this past weekend. It came out very good -- the weather was uncomfortably hot but this treat was just the refreshing dessert we needed. I used thawed frozen strawberries (whole unsweetened ones I had frozen myself last year) instead of fresh ones and it worked perfectly. I didn't have any fresh strawberries to use as a garnish the first time I served this, so used some real whipped cream instead. The second time I served it (to different guests) I used the whipped cream and topped with 3 or 4 fresh strawberries. Everyone enjoyed this dessert. My husband thought it was a little bit nicer if it thawed for 15 minutes before serving, rather than the 10 minutes suggested in the recipe."

"I used 1/2 qt. bag frozen blueberries and 1/2 qt. bag frozen raspberries. Everything else was the same. Was very easy and quick to make and tasted great. Served it with whipped cream and cookies."
