Ingredients

  • 2 cups sugar
  • 1 cup cider vinegar
  • 1 tablespoon salt
  • 1 tablespoon celery seed
  • 7 cups thinly sliced peeled cucumbers (about 6 medium)
  • 1 large onion, chopped
  • 1 medium green pepper, chopped

Nutritional Facts

3/4 cup equals 183 calories, trace fat (trace saturated fat), 0 cholesterol, 713 mg sodium, 45 g carbohydrate, 1 g fiber, 1 g protein.

Directions

  1. In a large bowl, whisk sugar, vinegar, salt and celery seed. Add cucumbers, onion and pepper; toss to combine. Refrigerate, covered, at least 1 hour, stirring occasionally. Yield: 10 servings.

"Like halfthere I have been making this for years, I am 73. I have never used that much sugar, ever. This is a recipe you make to taste. I also add a bit of oil first, then sugar, cider vinager then cracked pepper and salt, adjusting sugar as you go, no problem. Also add fresh dill, just beautiful. The dill complements the entire dish.then serve or let it set chilled in fridge. Yummy!!!! Oh by the way, never green pepper, too much, and thinly slice the onion in rings, not chopped. I got this recipe from my Bubbie, must be over 100 yrs old."

"This is a recipe I have made for many years, however I have never used that quantity of sugar. Cutting the sugar way down and letting it sit for a few hours, and it is perfection. I think the celery seeds could go also. It is just as good without them. A wonderful useful recipe."
